| I've had the wonderful opportunity of working in the Saltwater Cafe's kitchen for the past 7 months. It has been one of the greatest experiences. Chef Rolf went to culinary school, worked hard and achieved his dream of opening his own restaurant. Rolf took me on in September as his intern, something, which he had never done before. He gave ne the chance to experience the atmosphere of a restaurant kitchen, where all the excitment and sometimes, hectic pace can be found.Initially the high counters intimidated me, as well as the heat of the stoves and the various recipes. I soon grew comfertable with everything though and despite the potentially daunting first day I knew that I wanted to come back and work in the kitchen as long as I could. Chef Rolf has been incrediblu in that as well as increasing my education in the culinary arts, he had me on his TV show for a Christmas Special where we made crabs, corn, alligator bites, as well as delectable brownie deserts for some of te kids at the Laurel Nokomis School.
In many aspects, working in the kitchen at the Saltwater Cafe' though was a sort of therapy for me. I could go into the kitchen in almost any surly mood and leace with the biggest smile on my face. The people that I worked with in the kitchen became like family. Chef Rolf has created a supreme environment in the Saltwater Cafe' for teaching and appreciating the culinary arts. The people there, the huge energy rushthat I get when I successfully flipping a crepe or omelet, and the laughter that I cause when people walk by and see me crying while chopping onions, or a squeal of delight that I make when someone brings me something delicious to eat will always be great times for me to look back on. Thank you Chef Rolf. You've truly given me an opportunity that I will always appreciate and will never forget.
